Located atop the Hollywood Hills, Yamashiro watches over the ever-changing Hollywood restaurant scene with a keen eye. Originally developed as a private estate to showcase a priceless collection of Asian treasures, including a 600-year-old Pagoda still on display, Yamashiro has been a thriving restaurant since the 1920’s.
Family owned and operated the management is now in the hands of the next generation, headed by CEO Andre Ulloa. Recent renovations to both the gardens and the historic building have added to the “Mountain Palace” experience loved by Angelinos and visitors from around the world. New menu designs and new preparations of old favorites have kept pace with Hollywood’s current trends in Cal-Asian fusion concepts.
Navigating through the economic struggles of the past few years, Yamashiro continued to develop new ways to enjoy the experience, including a commitment to their bar mixology program, the Thursday night Farmers Market, Movie night, Beer and Wine Tastings, Hollywood Bowl Dine and Ride and new banquet spaces.
Chef Brock Kleweno has continued to reinterpret classic Yamashiro dishes in a fresh and award-winning manner. Innovative and exceptional items like the new Salt Plate and old favorites like Crispy Chicken, Truffle Hamachi and Jidori Chicken keep new and return guests interested. Recent costing projects and meal analysis has aided in the menu reformatting and improved usage in cost areas.
Maintaining and creating good financial information has been a priority for the management group this year. Using timely and accurate information for budgetary purposes has helped trim costs in both payroll and cost of sales. Constant attention to operating expenses and re-evaluation of current contracts and services has kept expenses under control.
Maintenance costs are always a considerable expense with such a large indoor and outdoor property to maintain. A budgeted improvement plan has helped keep key maintenance issues in line and avoided too much-deferred maintenance going forward.
Staff training in both menu knowledge and service guidelines has ensured a consistent average check.
Yamashiro is having an exceptional year in regard to sales as they move toward 2012.
